Ruffles + Tropics

Hey everyone,  
August will probably consist of approximately... 5 posts total, so prepare yourselves.  #studyprobs. Anyways, we still have a pretty long time until summer is over and I have found THE most versatile top that will go with almost everything.  I've worn this over 3 times in the past two weeks... The best part is its only $21! It's a neutral cream color, super light and flowy for these hot summer days, and so detailed yet very simple and classic.  I've paired it with denim shorts, brightly colored skinny jeans, and these tropical-esque printed chino shorts.

Nordstrom Anniversary Sale

Happy FRIDAY! It is also the first day of Nordstrom's Anniversary Sale, unless you have a Nordstrom credit/debit card, in which case I am sure you have already done some damage.  I've never really realized how great of a sale this is... it's not your typical 'getting close to the end of summer so let's get rid of everything' sale.  These are brand new FALL products that have been marked down until August 4th.  It's the perfect time to start thinking about cooler months ahead and treat yo'self to some fall staples, such as some suede booties or faux fur vest.  I've shared some of my favorites down below.  Check out the sale for yourself at Nordstrom!

Easy & Delicious Salmon

Did you ever get home after a long day of work and not felt like cooking a somewhat nutritious dinner?  Well, here is a perfect solution to that: a quick and easy, delicious grilled salmon recipe with some nutrient-rich sides.  This is my favorite way to cook salmon so far and it's so simple.  You might even already have some of the ingredients in your pantry!


What you'll need:
1-1/2 lbs salmon filets
1/3 cup of light soy sauce
1/3 cup brown sugar
1/4 cup olive oil
1/2 lemon (juice)
garlic powder to taste
salt to taste


Directions
Gather all ingredients listed and combine in a ziploc bag to marinate for anywhere between 30 minutes to 3 hours in the refrigerator.  You can even marinate it all day while you're at work and take it out when you get home.  After marination is complete, cook on a grill (I used a George Foreman) until salmon flakes easily with a fork.  For some simple and healthy sides, get a steamable bag of broccoli or cook some rice. If you have a little more time, you could also make an orzo spinach salad like this one  or run to Whole Foods salad bar and pick theirs up, which is what we did here.

Chambray & Red

Hey y'all!

It's been a while since I've posted.  I've been busy with work and trying to study for an important pre-health exam.  I did however find a fabulous top this weekend at... drumroll please... the Target little girls section.  Is this shirt a dress? Yep.  Would my 5 year old niece wear this? Yep... and she would love it.  But ruffles, chambray, and pom-poms all for $6? I couldn't say no.  It would also be a great maternity top for all you momma-to-be's out there.  I've came to the realization that red goes great with chambray.  It adds such a dramatic effect to a neutral look.

Gingham + Denim


I hope everyone has had a great long weekend celebrating the holiday with their family and friends.  I can't believe how beautiful the weather turned out to be.  I'm sure none of us wanted the weekend to ever end.  

So, I have been on a several month long hunt for some darker denim shorts that aren't too short, aren't too low rise, and guess what: I found them for $19.99.  Marshall's for the win.  I can't find them online anywhere so hurry! Run to Marshall's now! I can pair them with almost anything but this weekend I felt compelled to wear this gingham button down sleeveless shirt and throw on a red necklace for 'Merica's birthday.  Navy gingham... reminds me of a fresh summer picnic or a family cookout, which is exactly where I wore it.

Orzo Spinach Salad

Hey everyone,

Lately, I've been trying hard not to eat out as often and instead cook more recipes that include fruit/vegetables.  One of the best recipes for a hot summer day is a nice, refreshing pasta salad.  Here is an orzo-spinach salad recipe that is SO good, simple to make, and you can adjust all of the ingredients to your own preference.  

What you'll need to get:
1 lb spinach (washed, dried, stems removed)
1 pint cherry tomatoes (cut in half)
1 lemon
1-1/2 cups orzo
1 tbs extra virgin olive oil
1 tbs red wine vinegar
feta cheese
salt and pepper

Directions:
Stack the spinach leaves in a pile and thinly slice.  Pile all of the shredded spinach at the bottom of a medium mixing bowl.  Cut the cherry tomatoes in halves and add to the bowl.  Squeeze the juice of half of the lemon on top of tomatoes and spinach and save the rest of the lemon for more optional lemon juice at the end.  Add the cooked, hot orzo in the mixing bowl on top of the other ingredients, which will soften the spinach and get the flavors mixing.  Drizzle olive oil and red wine vinegar over pasta and toss to combine it all. Add feta cheese to your liking, as well as salt and pepper.  Place in the refrigerator and enjoy once its cold!
